Healthy Start 2013: Turkey Meatloaf with Ole 97

Members of the Johnny Cash Tribute band Ole 97 join Sarah in the kitchen for their special recipe of humor and song with a dash of turkey meatloaf!
Randy and Paul joined us last September to cook up what they call one of their "favorite Sunday dinner recipes". Today, we take a look back at their amusing cooking skills and their recipe! You have to see the finished product to appreciate the efforts!

Ingredients are:
2 lbs ground turkey
1/2 can mushroom soup
1 cup bread crumbs
1 egg
1/3 cup chopped onion
1 tbsp worchestshire sauce
4 cups instant mashed potatoes
1/3 cub apple butter
Directions:
Preheat oven to 350 deg.
In a large mixing bowl, combine the ground turkey, bread crumbs, egg, onion and worchestshire sauce.
Coat a 13x9 baking pan with non stick spray, add meatloaf mixture to form a bowl around where the edges of the pan so you can fill center with the mashed potatoes. Then cover mashed potatoes with more of the meatloaf mixture so the potatoes are in the center of the loaf.
Cover with foil.
Bake 1/2 hour.
Uncover and bake another 1/2 hour.
Remove from oven, and glaze the top with apple butter
bake uncovered for 15 minutes.
Remove from oven. let it rest for 10 minutes then serve.
Cranberry sauce on the side is a great serving suggestion
along with any green beans or corn.
