2012 Look Back: Chef Jesse Jones Dirty Shrimp and Cornbread

Chef Jesse Jones was a guest chef in the Central PA Live kitchen February 7, 2012.
 
On today's show, we take a look back at his appearance and his delicious recipe, created to celebrate Black History Month and Mardi Gras - "Dirty Shrimp and Spicy Aged Cheddar Cheese Cornbread with Micro Greens".

Chef Jesse made the trip to Central PA Live last year from New Jersey! He was in the area, working with consulting Chef Melanie Preschutti of State College. Chef Melanie has made several appearances to cook in the Central PA Live kitchen!

Chef Jesse Jones is a celebrity chef and has catered for actor/director Tyler Perry. Chef Jesse has also appeared on various talk shows including The Wendy Williams Show in New York City. He was in Central PA this week to work with consulting Chef Melanie Preschutti of State College. Chef Melanie has made several appearances to cook in the Central PA Live kitchen!

Chef Jesse's Dirty Shrimp

Chef Jesse's Essence mix:
1 tsp black pepper
1 tsp white pepper
1 tsp kosher salt
1 tsp Sweet Paprika
1 tsp Granulate Garlic
1 tsp Granulated Onion
1/2 tsp crushed red pepper
1/2 tsp fresh thyme, minced fine
1/2 fresh Rosemary, minced fine
1/2 fresh Oregano, minced fine

Additional Ingredient List:
1 cup unsalted butter (1 stick)
1/4 cup Canola oil
1 1/2 tsp fresh minced garlic (2 cloves)
1 dozen Shrimp (choice of Size)
1 tsp Worcestershire Sauce
1/4 cup Guinness Strout
1 cup fresh lemon juice
1 Cup Fresh butter (for finishing)
1 scallion, sliced

Method:
In a small bowl, combine Chef Jesse's essence mix, then mix into the shrimp. Marinate for 4 hours, or overnight for more flavor.
In a saute pan melt butter and oil. Medium heat, Sweat the garlic, for 1 minute, don't brown.
Add the shrimp and cook until lightly pink, quickly not to over cook. add Worcestershire sauce, lemon juice, beer. Cook for 1 minute, finish with butter,
Garnish with scallion. Serve with Chef Jesse's Buttermilk Cornbread.
