Hi, I'm Carol - and my family is pretty much everything to me. I am blessed with a devoted husband, beautiful (inside and out) twin daughters who are in college, a loving mom, and a fantastic, supportive extended family. And since I believe there's so much more to family than genetics, I am also blessed with terrific friends who are an integral part of the equation of my life. And I certainly couldn't fail to mention Gracie, my dog, whom we rescued (or did she rescue us?) - let's just say it's mutual. And all these special people (and Gracie) love to prepare and eat good food, so spending time together, especially in the kitchen and around the table, is a central part of my life.
Favorite Mr. Food recipe: Chocolate Chip Cheesecake (It feeds a crowd so we often bring it to parties, where it's always a hit.)
How often do I cook? 5-6 times per week
Who am I cooking for? My family and friends
How long have I been cooking? Since I'm out of college (many moons ago)
My biggest challenge in the kitchen: Planning ahead to have everything I need. Since I keep a kosher kitchen, I can't just run into the local supermarket to pick up meat of any sort.
What profession best describes me in the kitchen? Sous chef, since my husband, who's a really good cook, often likes to take over. I don't mind - we're a really good team in the kitchen.
The kitchen appliance I couldn't live without: My good knives. For years I used crummy knives and struggled with them. When I got a good set, I couldn't believe how much easier food prep became. (But I must confess - I do use more bandages now!)
My ultimate meal: Probably anything Italian
The one food I can't stand: Mayonnaise - don't know why, but I have an aversion to it.
The food that instantly takes me back to childhood is: Good Humor ice cream. We used to chase the Good Humor truck down the street on summer evenings with money tightly clutched in our fists. Besides delicious ice cream, the Good Humor man was very cute!
If I were a spice, I would be: Garlic (Remember: I love pretty much anything Italian but I use garlic in everything where it makes sense.
My favorite food that grows from the earth is: Tomatoes (when they're good, they're great - a favorite summer meal is a cut-up tomato with some crumbled feta cheese, sunflower seeds, and a balsamic vinaigrette - and don't forget some crusty bread for sopping up the extra dressing)
If I could have dinner with anyone in the world, dead or alive, it would be: My grandmother (my dad's mom) - I never knew her because she passed away when I was a year old, but by all accounts she was an amazing woman and had incredible culinary skills, all self taught.
Sweet tooth, or salt-craver? What's my weakness? Both! But if I had to pick just one, I might shock some people by saying salt. I love it and I'm not ashamed to say so!
