Southwest Duck Pizza

Southwest Duck Pizza 

(Yields 4 small, 7" Individual Pizzas)


4 boneless duck breasts:

Score through the skin and fat, but not the breast meat. Place in a Ziplock bag with the following marinade:


½ cup Orange Juice
2 tbsp Lime juice
1 Tbsp  Tequila
1/8 tsp EACH Cumin, Cayenne, Blk. Pepper, and Salt.

Refrigerate as least 1 hour or longer for better penetration.


Mix together:

8 oz. Creamy Ranch Dressing
2 Tbsp. Jalapeno Pepper, chopped
2 Tbsp.  Cilantro, chopped


Pizza prep:


4 each 7" crusts- pre-baked
8 oz.  Salsa
2 cups Mozzarella cheese, shredded
2 cups  Romaine lettuce, shredded
½ pint  Cherry Tomatoes, quartered


Grill duck breasts until medium rare, about 10-15 minutes, allow cooling, and then thinly slicing on the bias. Spread salsa on pre-baked crusts, top with cheese and bake in 350-degree oven until bubbly (approx. 10 min). Remove pizza to serving dish or plate.
Top pizza with lettuce, dressing, tomatoes and shingle slices of duck breast across the top. Serve with extra dressing for dipping. Serve with a fork and knife and don't forget to… Enjoy!
