Sassy Sweet Potatoes

1 sweet potato

Pierce top of sweet potato several times with a fork. Place on a microwave-safe plate and microwave on high 6 to 8 minutes, or until tender.
Remove from microwave, cut potato lengthwise to within 3/4 inch of bottom. Gently squeeze open, fill with a topping (see Note), and microwave on high about 1 minute, or until hot.


Filling Options

You can do your own thing or choose one of these topping mixtures to make a complete meal:
Barbecued Chicken: 1/3 cup Southwestern-style cooked chicken strips, 1/4 cup corn, 2 tablespoons barbecue sauce
Ham and Pineapple: 1/4 cup diced cooked ham, 2 tablespoons canned crushed pineapple, 2 tablespoons maple syrup
Southwestern Style: 1/4 cup drained black beans, 1 tablespoon bacon bits, 3 tablespoons salsa
