- 2/3 cup shortening
- 2 and 1/2 cups sifted cake flour
- 1 and 2/3 cup sugar
- 1 and 1/4 teaspoons of baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 and 1/4 cups mashed fully ripe bananas
- 2/3 cup buttermilk
- 2 eggs
- 2/3 cup chopped walnuts (optional-Nancy doesn't add the nuts)
Stir shortening to soften. Sift in dry ingredients. Add bananas and half the butter milk. Mix until all flour is dampened. Beat vigorously for 2 minutes. Add remaining butter, milk and the eggs. Beat two minutes longer. Add in nuts.
Bake at 350* for about 35-40 minutes.
Moist Chocolate Fudge Cake - Nancy says to make your cakes more moist add a small packet of instant pudding (you choose the flavor based on the cake) and add an extra egg.
