Fruity Pudding Parfait

Fruity Pudding Parfait
Makes 6 servings
Prep Time: 15 minutes
Ingredients
- 2 (3-ounce) packages vanilla instant pudding mix (regular or sugar-free)
- 4 cups low-fat or fat-free milk
- 20 vanilla wafer cookies (or 40 – 50 mini vanilla wafer cookies)
- 3 medium bananas, sliced (or approximately 2 ½ to 3 cups any fresh, frozen or canned fruit or mixture of fruits)
- Granola, chopped nuts, sliced fruit or whole grain cereal (for topping)
- Whipped cream (optional)
Prepare pudding with low-fat milk as directed on package. Spoon one cup of pudding into a 2-quart serving bowl and top with 10 cookies and half of the fruit. Continue layering with 2 cups of pudding, remaining cookies and fruit. Top with remaining pudding, cover and refrigerate for 3 hours or overnight. Garnish with granola, whole grain cereal, fruit slices or chopped nuts and a dollop of whipped cream, if desired.
NOTE: Ingredients can be layered in individual serving dishes.
In place of instant vanilla pudding and vanilla wafers you may want to try:
Lemon pudding mix and lemon wafer cookies
Chocolate pudding mix and mini chocolate graham cookies
Banana cream pudding mix and ginger snaps
