Mediterranean Quinoa with Grilled Vegetables and a Fresh Basil Vinaigrette isn't just a good meal for diabetics, it's a good meal for everyone, and tasty too! Hot or cold, this dish is great!
Quinoa is one of nature's super foods. It's a tiny, nutty tasting gluten free grain that delivers healthy doses of protein and fiber. It is one of the few plant foods that is a complete protein, meaning that it provides the body with all 9 essential amino acids, similar to milk. Although it's called a super grain, quinoa is actually a seed and is in the same family as spinach, beets and chard.
If you'd like a cooking demonstration of your own, Chef Harrison Schailey has one coming up on March 12th and 19th from 4:30-6:30 p.m. at Fit for Play in State College. It's all part of their Diabetes Awareness and Prevention Series. The event is free to the public.
