Stuffed Chicken w/Peach Chutney and Gouda

Ingredients per serving:
1 six oz chicken breast
1 T chutney
1 T lemon juice
1 slice (approx. oz) smoked gouda
Begin by slicing a pocket into the chicken breast starting on the thick side and cutting towards the thin side. Rub the chicken with the lemon juice(if time allows marinate 1 hr). Spread the chutney inside the chicken breast and stuff with the cheese. Place in a lightly oiled baking dish and bake at 325* for 25-30 min.
CHEFS NOTE- Sometimes I put a slice of ham or some crumbled bacon in with the cheese. Any kind of jam or preserves will work in place of the chutney.
