Chef Showcase: Amaretto Peach Soup

Ingredient List:
- 2 oz. butter
- 2 pounds peaches, sliced
- 1 cup water
- 1 oz. vanilla
- 1 Lemon (juice of)
- 4 oz. peach schnapps
- 1/2 cup brown sugar
- 2 oz. almond extract
Method:
Saute sliced peaches in butter. Add remaining ingredients and cook until peaches are soft. Puree and chill.
Sour Cream Garnish:
- 2 oz. sour cream
- 1 tbsp brown sugar
- 1/2 tsp almond extract
Method:
Add sour cream, brown sugar, almond extract and mix until smooth. Garnish soup with mixture.
Alternative Use: Garnish Cheesecake with Soup to create a fresh, sweet sauce for dessert dipping.
