Warm Spinach Salad

1 oz Butter
2 oz Red Onions
4 oz Mushrooms, sliced
4 oz Tomatoes, diced
2 oz Bacon, diced
1 pinch Salt, Pepper
4 oz Balsamic Vinegar
10 oz Spinach
4 oz Gorgonzola
Croutons
1. In a medium saute pan over high heat saute butter, onion, mushrooms, tomatoes and bacon for 3-4 minutes
2. When tomatoes have softened, add balsamic vinegar, salt and pepper
3. Add spinach
4. Cook for one minute
5. Transfer to bowl or bread bowl
6. Top with Gorgonzola and croutons
7. Enjoy!
