Toni whipped up a great treat that's perfect for fall, and features your left over pumpkins!
PLUMPKINS:
2 c. whole wheat flour
1 c. rolled quick oats
1 tsp. cinnamon
1 tsp. nutmeg
tbsp. baking powder
tsp. baking soda
4 c. canned pumpkin
4 eggs
1 tsp. vanilla
2/3 c. canola oil
Preheat oven to 350 degrees.
Combine the flour, oats, cinnamon, nutmeg, baking powder, and baking soda in a mixing bowl.
Mix pumpkin, eggs, vanilla and oil in mixing bowl.
Slowly add dry flour mixture until well blended.
Use mini-muffin pans and fill each full with mixture.
Bake 20-30 minutes.
