Chef Showcase: Cinnamon Basil Chicken & Pesto Cream Sauce

PESTO CREAM SAUCE
For each serving you will need;
3/4 c heavy cream
1 teaspoons prepared pesto
1 Tablespoon shaved parmesan cheese
1 teaspoon chopped garlic
1 teaspoon olive oil
In a small sauce pan, saut the garlic with the olive oil until translucent. Add the heavy cream and simmer 3-4 min to reduce slightly. Stir in the pesto and parmesan cheese. Serve immediately over pasta or rice.
CINNAMON BASIL CHICKEN BREAST / PORK LOIN
FOR EACH PORTION YOU WILL NEED;
ONE 5 - 6 oz chicken breast
4 lg or 6 med basil leaves - chopped fine
TWO 1/8 teaspoons cinnamon
Rub each side of the chicken breast with half of the chopped basil, then sprinkle each side with 1/8 t cinnamon.
Preheat a saut pan and sear each side of chicken for 1-1/2 min. Reduce heat and finish cooking. OR bake in 350* oven for 20 - 25 min
