Chocolate Avocado Pudding Pops
1 avocado
3 T cocoa
1/3 cup honey
1/4 tsp. sea salt
1 tsp. vanilla
1/2 cup water (more or less as needed)
Combine ingredients in a blender and blend until smooth. You may add banana or natural peanut butter to the recipe as well. Freeze in Popsicle molds to make pudding pops.
Cilantro & Lime dressing or marinade
INGREDIENTS:
cup fresh lime juice
cup olive oil
cup chopped cilantro
1 T. chopped onion
1 clove garlic minced
Salt and pepper to taste
PREPARATION:
Wisk ingredients together.
To make chicken Kabobs: Cut chicken breast into 1 inch chunks and marinate for 30 minutes in the refrigerator. Place the chicken with an assortment of peppers or cherry tomatoes on wooden skewers. Broil for 12-15 minutes.
Sweet Potato Chips
Slice one sweet potato as thinly as possible. Place the slices on a baking sheet in the oven at 200 degrees for 50 minutes. Turn the slices over and rotate pan (if not cooking evenly) and bake an additional 30 minutes. The slices will become slightly more crisp after being removed from the oven.
You can learn how to make these recipies and others at Dr. Luke's healthy eating class. The class will be held on Monday, February 6th at 6:15 p.m. at Health First Chiropractic in Altoona. To reserve your seat, call 941-1400.
