Nutritious Snack Recipes for Kids

Granola Bars
- 2 cups steel cut oats
- 1 cup sunflower seeds (raw)
- 1 cup Almonds
- 1 T Butter
- 1 cup Peanut Butter (all natural nothing added REAL PEANUT BUTTER!)
- cup Molasses
- cup honey
- tsp. Sea Salt
Place almonds in a small baggy and lightly smash with a hammer, meat tenderizer, baseball bat, whatever is handy. Then mix almond pieces, sunflower seeds, and oats on a cookie sheet. Place in 350 degree oven for 10-12 minutes (stirring them occasionally). In the meantime, place all other ingredients in a small sauce pan over medium low heat (stir frequently) until the peanut butter has thinned and is easily mixed with the other ingredients.
Combine the oat the dry and wet ingredients in a bowl and mix thoroughly (until all the dry ingredients have at least a small coating of the PB mixture). Place in a 9"x 9" container with sides. Place a strong even pressure downward over the mixture (to pack the granola bars together). Place in the fridge for 1-2 hours or until completely cooled before cutting.
Chicken and sweet potato wraps
INGREDIENTS:
- Baked Chicken strips
- 1 medium sized sweet potato
- Fresh diced garlic to taste (approximately T)
- Sea Salt to taste
- Large Romaine lettuce leaves
- 1 red onion cut into thin slivers
- 2 T. butter
PREPARATION:
Chicken strips can be baked as described in previous recipe or with any combination of herbs and spices you prefer (fresh oregano, basil, and garlic with the same cooking instructions works well also). Bake the sweet potato at 450 degrees for 25-30 minutes or until soft. Place sweet potato, garlic, sea salt, and butter in a food processor and puree. Place the chicken and sweet potato spread in a large romaine leaf with a few slivers of onion. Enjoy!
