Ingredients: 2 Tbsp. butter 1/4 cup cornstarch 3/4 cup sugar 1/2 tsp. salt 2 cups milk 2 egg yolks, slightly beaten 1 tsp. vanilla 2 bananas, sliced 1 pkg. graham crackers, finely crushed Directions: Melt butter. Blend in cornstarch, sugar, and salt with a wire wisk. Gradually add milk, stirring thoroughly. Cook in microwave, stopping to stir every 1 to 2 minutes, until slightly thickened. Stir in egg yolks and cook for an additional minute. Then add vanilla and stir thoroughly. Pour half of the pudding in the one-quart bowl. Take banana slices and lay on top of pudding. Sprinkle about half of the graham cracker crumbs on top of bananas, covering them completely so they don't turn brown. Repeat the layers of pudding, bananas and graham cracker crumbs. Put in refrigerator, uncovered, to cool completely (about 2 hrs.) and then cover. |
