Reported by: Amy Mearkle Friday, Aug 21, 2009 @08:30am EDT Grange Fair Ginger Cookies Guest Chef: Kara Krebs - 2008 Grange Fair Queen Ingredients 2 eggs 1 cup lard 2 cups brown sugar (packed) 1 cup Brer Rabbit baking molasses 1 tablespoon vinegar 1 tablespoon ginger 1 tablespoon baking soda 1/2 cup boiling water 6-7 cups of flour Directions Cream together eggs, lard and brown sugar. Add in molasses and vinegar. Boil 1/2 cup of water. Then add to it the baking soda and mix. Add water mixture to the dough and stir. Add in flour to stiffen. Add about 1 cup at a time and keep stirring until the dough thickens up. Chill dough in the refrigerator to make it easier to work with. Roll dough into small dough balls about the size of a walnut and roll in sugar. Or you can roll out the dough and use cookie cutters. Place dough balls or cut outs on a cookie sheet.
